Real, Authentic Cuisine

I'd give this cookbook 5 stars for being what I perceive to be recipes for truly authentic Mexican cuisine. The recipes are well written and easy to follow. The book contains everything needed to make an amazing meal from start to finish, with recipes from the spices used to the tortilla itself. My favorite thing besides though are all of the exquisite pictures of the food, there is a photo for nearly every main dish. There are so many of these recipes that I'd love to try, but alas, without a Latin grocery store (in my rural area) I have no hope of finding most of these ingredients that are commonly used without ordering them on Amazon.

I was so excited when I learned this cookbook was coming! Cooking like abuelita—but better

I’ve owned this cookbook for about a year, as part of a large collection of Mexican, Latin, and Spanish cookbooks, and it is by far my favorite. The flavors are so vibrant, and the recipes so concise, that I feel like I’m back in Mexico every time I make something. My Mexican husband often closes his eyes and tells our kids that this is just like he used to have...there is no better compliment for cooking instruction than that. But beyond just recipes, I’ve been happy to realize that a lot of these recipes can be made one at a time, and then linger in the fridge and freezer, and suddenly you have something to eat with little extra effort for many more meals. It’s not just individual recipes, but a larger system of cooking that makes having regular, satisfying Mexican meals possible. So grateful that this information is available—it’s a game changer.

Delicious

I have been pouring over this book for a few months. I've eaten at the restaurant in SF a few times, when I'm down to visit family, so I know the food in the restaurant is amazing (I am in love with the Totopos! simple but so delicious. I really wish they had this butternut squash empanada with pumpkin seed mole that my mother had once, but that seems like it was just a special). Unfortunately I have found that while I love some restaurants, I am disappointed in the cookbook as I can't get the same results. Not so with this one.This last weekend I finally got around to making some of the dishes for a party. I made the Tacos de Cochinita, Frijoles de Negro(except I soaked them overnight with ACV), Picadillo (minus the potatoes) and some chili oil for veggie tacos (I didn't have cascabel chiles so I just used the guajillo type). Every one of them turned out tasty but by far my favorite was the pork taco (cochinita). I didn't have time to really marinate more than 30 min, but it still packed a bunch of flavor. With a little bit of hot sauce it was perfect and better than most restaurants around where I live!!So far I'm not regretting my purchase at all!

Excellent book to get the skills needed for Mexican cooking

Very well written by top chef Gonzalo Guzman - learning the why, how and reason behind his technique. Non patronizing explanation of basics, he takes the fear out of learning a whole new palate of ingredients. The photos are beautiful and well written recipes. I haven't enjoyed a cookbook this much since Thomas Keller's ad hoc at home. I'm quite sure that I'll need to replace this in several years as I'll have made notations and worn this one out. Really exceptional cookbook.

The most amazing Mexican food

We received this cookbook as a gift. It has recipes for the most incredible authentic homemade Mexican food. We love the recipe for black beans and refried black beans. You may think that is just a simple dish, and it is, but this version is the most delicious I have ever had. Everything has been a hit.

Awesome

Easily the best cookbook for Mexican food I've ever seen. Cooked my way through 95% of it and all the food is spot on. The educational value of foods from various regions of Mexico is an added bonus. Ever get a chance to eat at his restaurants it's a must!

My new favorite cookbook!

Every time I get a new cookbook, I go through it and sticky note pages that are my "this looks so good, I must try this immediately!" recipes - I actually couldn't do it with this one because I kept getting tempted to put a sticky note on every page! Everything in this cookbook looks and tastes delicious. I've only tried a few so far but they've all been hits!I'm very fortunate to live by a specialty grocery store so getting some of the more hard to find ingredients wasn't a problem for me but, for most of the recipes, you can get around it regardless. You might still have to work around it but definitely manageable.

Complex but worth it

I really enjoy this book. I live in London and have managed to find most ingredients easily (in store and online). I’m not going to complain about hard to source ingredients, because I totally expect and welcome that when I’m cooking different cuisines. But if you’re someone who wants to find everything in your local supermarket, pass on this book.Being relatively unfamiliar with authentic Mexican cooking in the UK, I have really enjoyed learning new techniques. I make all my own tortillas and tacos now, and like with all things a little practice and persistence takes you very far. I’ve enjoyed pickling, learning to cook meat via the boiling method, and expanding my salsa making skills. But again, if you’re averse to putting in some time and effort to genuinely learn new skills, because of time or whatever, pass on this book.For those who are interested, it’s fantastic. The recipes are delicious and there’s a real range of them. Salads, salsas, breads, pickles, veggies, and meats. Something for everyone.

Bought this book as a Christmas present for my mom. It has lots of information about Mexican ingredients and their origins. A good read and a great table book.

Uno spaccato originale e diabolico della odierna cucina messicana

Un ristorante di San Francisco e un cuoco messicano; una cucina dell'anima, se l'anima avesse anche lei uno stomaco (e in fondo credo l'abbia, se no di che vive?). Niente fronzoli dunque, piatti a metà strada tra il conforto casalingo e il cibo di strada, prodotti veri che si toccano con mano, gesti e facce di un Messico attuale, di un gusto profondo.Poesia che coinvolge anche la più misera insalata; menzione particolare per le salse (eccezionali) e per i drinks.
