Q: How do you select master or slave modes?

First you have to build the circuit shown at : //electronics.stackexchange.com/questions/412525/when-i-write-data-to-a-ble-characteristic-ffe1-to-send-data-over-bluetooth-is/412561#412561 (had to make that non-clickable to be able to post). After that you upload the code (shown at that same link) to your Arduino. Finally, you will be able to connect to the device thru your Arduino and the Arduino dev environment using the Serial Monitor. At that point you can send commands to the HM-10 which will allow you to put it into different modes.

Q: can i use this to turn things on and off through bluetooth from my iphone?

You can use this to turn things off with your phone. However, you'll need a few things: 1) An app (Android or iOS depending on what type of phone you have) to connect to the device and send data. 2) This device will be connected to a controlling microprocessor (such as an Arduino) so that when this device receives data that your app has sent then the microprocessor will examine the data and determine what to do such as applying voltage to a relay which results in the relay switching off which turns off the thing (such as an LED or whatever).

You may need a voltage divider on hm-10 Rx. I have built a circuit and have Arduino code that works with these modules and I posted it at : //electronics.stackexchange.com/questions/412525/when-i-write-data-to-a-ble-characteristic-ffe1-to-send-data-over-bluetooth-is/412561

Q: Can this receive iBeacon signals? I want to be able to detect iBeacons.

yes, review the documentation for AT commands that do this.... device returns a list of received beacons
