The Food of Spain In One Magnificent Volume
The late Penelope Casas is probably single-handedly responsible for introducing the superb cooking of Spain to English-speaking (and especially American) audiences. Her books are all classics, which she largely compiled into this one great magnum opus. It’s a magnificent and memorable legacy. For anyone unfamiliar with Spanish food it’s an encyclopedic guide to this delicious cuisine, which features “Mediterranean” flavors in mostly simple, straightforward, unfussy recipes. It’s hard to go wrong with almost any of them! Americans who are new to Spanish food and cooking need to understand that “Spanish” is not a synonym for “Mexican” or “Latin American.” The food of Spain is flavorful and well-seasoned, using many New World ingredients, but it’s not spicy hot with chilies, for the most part. If you’re looking for recipes for tacos and tamales, ceviches and causas, moles and enchiladas, and other Latin American specialties, you’ll need cookbooks focused on the foods of the Americas, like Elisabeth Lambert Ortiz, Diana Kennedy, and Virgilio Martinez’s equally magisterial works. Latin American dishes are hardly unknown in Spain but usually appear in specialized restaurants or on immigrant tables. They don’t ordinarily make up part of everyday Spanish home cooking, which is immensely rich and varied on its own! Understand the distinctions and enjoy the differences! The culinary possibilities of the vast Spanish-speaking world are endless and delicious! Savor them all!

Great book - TERRIBLE KINDLE EDITION!!!!
Great book - TERRIBLE Kindle edition. I've been using this book for three years. There're many years of discoveries to be had in the mostly simple recipes contained within. If you live near a Spanish grocery (I live near Despana in NYC) then you can really do some fun stuff.The Kindle edition cannot be opened on any of my Kindle devices, it can't be opened with the Kindle desktop app, it can only be opened on the online browser Kindle reader. This is a real inconvenience to me. I contacted the publisher about it years ago - they said they'd look into it - as far as I know, nothing has improved. Maybe they don't test the ebooks on an actual Kindle device?It's a real shame that a treasure of a book like this doesn't get the attention and care it deserves by the publisher.

Wow…great collection of Spanish recipes.
Our family is going to have a great time going through the recipes from this book. The recipes are simple enough to follow and the bonus is the short story that accompanies each of the recipes.

I was hoping it would have a great tamale recipe but it doesn't.

Best cookbook I’ve ever owned!
I am an avid cookbook collector and would classify myself as an advanced home cook.This is by far the best cookbook I’ve ever owned.

Poor printing
Arrived today - can't comment on recipes but printing is poor quality. Many pages are strangely pale as if insufficient ink was used.

Great book, great value
It is as comprehensive a selection of Spanish recipes as you can find. It covers the full range of Spain's various regions. It is informative, clearly written and well organized. I have now completed well over two dozen recipes and have not been disappointed at all. This is the type of cookbook that once you start to use it you will begin to understand the nature of Spanish cuisine; you will then be able to add your character to any dishes you make. I think this book is particularly well suited to an experienced cook, not a novice. One of the better books I have purchased and a very good value. Other books on Spanish cuisine may be trendier but this lays the foundation that they are based on.
